Ingredients of Gajar Dudhi Muthias (Carrot & Bottlegourd Muthias)

  1. It's 1 cup of grated carrot and bottleguard (I took 1 carrot and a small bottleguard or dudhi).
  2. Prepare 1 tsp of chilli-ginger-garlic paste (you can even crush them or cut into small pieces).
  3. It's 2 cups of whole wheat flour.
  4. Prepare 1 cup of bengal gram flour or besan.
  5. It's 1/2 cup of semolina or rava.
  6. It's 1/2 cup of oil (some for kneading dough and some for frying muthias).
  7. It's 2 tsp of red chilli powder.
  8. You need 2 tsp of coriander cumin powder.
  9. You need 1 tsp of turmeric powder.
  10. You need 2-3 tsp of sugar.
  11. It's 1 tsp of lemon juice.
  12. Prepare to taste of salt.
  13. Prepare 1 tsp of mustard seeds.
  14. You need 1 tsp of cumin seeds.
  15. You need pinch of asafoetida.
  16. You need 1 tsp of sesame seeds (optional) - I have not used it in this recipe.

Heat a kadhai or pan add 2 tbsp of oil, add mustard and cumin seeds, asafoetida and let it splutter. Add few curry leaves and add steamed muthias..

Add pinch of salt, 1 tsp of sugar (optional) and some red chilli powder, cumin coriander powder, turmeric powder, lemon juice and mix well on a medium high flame and let it get cooked for 5-7 minutes till they are golden crisp.
